A employee was handling raw meat at the cook line smashing raw burger balls into pattys; the employee then proceeded to plating ready to eat salmon and prep salad without washing hands. Popular hood urban food connoisseur Mr. Chime Time ate at Mr Charles and hated it.

The inspector had to coach the employee at Mr Charles Chicken and Fish that glove changes and hand washes are required to prevent contamination and cross contamination when changing tasks.

Employee food was stored directly above customer food. Raw fish was over ready to eat cabbage. Raw bacon was over multiple ready to eat foods including cooked chicken gizzards on the speed rack.

Heavy buildup was present on the wall mounted potato slicer. A employee was cooking in the kitchen without a hair net. Mr. Charles Chicken and Fish has received bad health scores in the past due to dead roaches in the kitchen.

A build up of gray and black soil was present in the ice machine. Several cooked foods were out of temperature including the macaroni and cheese, chicken thighs, and chicken wings.

The health inspector noticed that multiple uncooked foods were not within the correct temperature either including tomatoes, lettuce, hard boiled eggs, and sliced cheese within the prep top unit.

No date marking system was put in place for foods. A large amount of dead pests were present in the rear of the Mr Charles Chicken and Fish restaurant. Pests were in traps as well as in the back maintenance closet.

Boxes of food were present on the floor of the walk in freezer. There was no sanitizer hooked up to the sanitizer dispensing hose of the 3-comp sink.

Observed heavy buildup of dust and debris present on the external surfaces of equipment throughout the facility. Cooking equipment, shelving, and condenser fans were dirty in the restaurant.
